π Hot Honey Lemon Chicken π―

Crispy, golden chicken tenderloins coated in a savory Parmesan-feta crust, finished with fresh lemon zest, melted Parmesan, and a sweet-and-spicy hot honey glaze.
That sweet + lemony + spicy glaze against the salty feta and crispy coating is ridiculously good. ππ―π
π Ingredients:
For the Chicken
β’ ΒΎ cup breadcrumbs
β’ 1 tsp garlic powder
β’ 1 tsp onion powder
β’ 1Β½ tsp Italian seasoning
> I substitute basil because I’m not a fan of Italian seasoning.
β’ Salt & pepper, to taste
β’ 4 oz feta cheese, crumbled
You can substitute grated Parmesan cheese.
β’ Olive oil, for coating
β’ Parmesan cheese, for topping
β’ Fresh lemon zest π
π― Hot Honey Glaze
β’ 4 tbsp honey
β’ 2 tbsp lemon juice
β’ Β½ tsp red pepper flakes πΆοΈ
β’ 2 tsp brown sugar
β’ 2 tsp olive oil
π©βπ³ INSTRUCTIONS:
1. Preheat the air fryer
Preheat your air fryer to 375Β°F.
2. Make the coating
In a bowl large enough to toss the chicken, combine the breadcrumbs, garlic powder, onion powder, Italian seasoning (or basil), feta, salt, and pepper.
I personally like to divide the mixture in half so I can replenish it halfway through coating the chicken.
3. Coat the chicken
Lightly coat the chicken tenderloins with olive oil.
Toss each tenderloin in the breadcrumb-feta mixture, then gently press additional coating onto the top for an extra layer of crispy goodness. π
4. Air fry
Place the chicken in a single layer with a little space between each piece.

Air fry at 375Β°F for 5β7 minutes.
Carefully flip the chicken and cook for another 5β7 minutes, or until the thickest piece reaches 165Β°F internally.
5. Make it HOT & HONEY π―
Return the cooked chicken to the air fryer in a single layer if possible.
Zest fresh lemon peel over the chicken. π
Drizzle the hot honey lemon glaze over the chicken, then sprinkle a layer of shredded Parmesan over the top. π§
6. Give it the final crisp
Air fry for another 2β3 minutes, just until the glaze is heated through and the Parmesan is melted and lightly crisped.
7. Serve & enjoy
Serve immediately with your favorite pasta or tortellini.

π A Little Manic Mom Note
Don’t be shy with that lemon zest. It adds a fresh little punch that cuts through all that cheesy, crispy, sweet-and-spicy goodness.
Until next timeβ¦
Keep building a beautiful life between coffee & chaos,
